Durian is the most complex, most talked-about and most distinctive fruit in the world. In the right context — from Asian restaurants to adventurous fine dining — it is an absolute showstopper.

What is durian?

Durian (Durio zibethinus) is a large, spiky fruit with an extraordinarily rich, creamy flesh. The aroma is intense and layered — described as custard, almond, onion and overripe cheese all at once. The taste, however, is considerably milder than the smell suggests: creamy, sweet and complex.

Choina mainly supplies the Monthong ('Golden Pillow') variety from Thailand — the most widely exported type. Monthong has a relatively mild aroma and a thick, meaty interior with few seeds. Other varieties such as Musang King (Malaysia) are more intense and more bitter in flavour.

Origin & tradition

Durian is grown in Thailand, Malaysia and Indonesia. The main season runs from May to August. In Thailand there is sometimes a smaller season in December/January. Thailand exports the most durian to Europe.

Ripe durian can be identified by: cracks beginning at the bottom of the spiky 'panel', a hollow sound when tapped gently, and a penetrating aroma that can be smelled even through the rind.

Durian ripens quickly once cracks appear. At Choina we deliver durian at the moment it is just ripe — process immediately.

Flavour & texture

Durian is used in Asian cuisines both raw and cooked. Raw is when the flavour is at its best. Heat changes the profile — heated durian (in ice cream, cake or mochi) tastes milder and creamier without the sharp notes.

Pairs classically with sticky rice, coconut milk and pandan. In modern desserts: incorporated into ice cream, mousse or as a filling in pastries. Durian and alcohol combine poorly — this causes a strongly unpleasant feeling in some people. Warn guests about this.

Storage & freshness

Fresh durian is extremely perishable once opened. Consume immediately or freeze straight away. Frozen durian (flesh separated from the rind) keeps for up to 3 months and thaws excellently for further processing.

Store unopened durian at room temperature and plan to process it on the day of receipt. The aroma penetrates cold storage strongly — store separately or well sealed.

Durian and alcohol interact chemically in a way that causes discomfort in many people. Do not serve durian dishes in combination with alcoholic beverages.

Professional kitchen tip

For guests trying durian for the first time, the Monthong variety is the most approachable — mildest aroma, softest flavour. Serve it in a calm setting and inform guests in advance. The 'the smell is worse than the taste' message convinces more people to try it than to avoid it.
