Red dragon fruit is available year-round. The fuchsia-pink skin and speckled white flesh make it one of the most photogenic fruits in the kitchen.
Red dragon fruit (火龍果, huǒ lóng guǒ) — also known as pitahaya or strawberry pear, botanically Hylocereus undatus (white flesh) or H. costaricensis (red flesh) — has a bright pink to fuchsia exterior with green wings and pure white flesh full of small black seeds. In the red-skinned variety with red flesh (costaricensis), the colour is also intensely magenta on the inside.
The flavour is mild and gently sweet — more subtle than most tropical fruits. The strength of dragon fruit lies in its visual impact: the colour, the texture, the seeds. The flesh has a slight crunch similar to kiwi.

When assessing ripeness, we look at three things: the wing tips — still slightly green means fresh, completely dry and brown means overripe. The skin — firm to the touch, not soft or wrinkled. And weight — heavier fruits contain more juice and flesh.
Dragon fruit does not ripen further after picking. What we deliver is ready to eat. Never refrigerate unopened fruit — that halts the ripening process and alters the texture.
Dragon fruit does not tolerate heat well — the flesh quickly loses its texture and subtle flavour. Use it exclusively raw or as a finishing element.
Pairs well with passion fruit, mango, coconut and lychee. In terms of flavour balance, a lightly acidic dressing or citrus zest works well to accentuate the mild flesh.
Store dragon fruit at room temperature and use within 2–3 days of receipt. The wings and skin will brown earlier, but the flesh keeps longer.
Refrigerated (8–10°C), shelf life is 5–7 days. Do not store below 8°C — this damages the flesh.
Once cut, store dragon fruit covered in the refrigerator and use it the same day or at the latest the following day.
Choose fruits whose wing tips still have a slight green tinge. Completely brown, papery tips mean the fruit has been stored too long. The skin should feel firm and give slightly — too hard means underripe, soft means overripe.
