Yellow dragon fruit is the premium variety: sweeter, more aromatic and visually distinct from the red type. Less available, but considerably more flavour.

What is dragon fruit geel?

Yellow dragon fruit (黃龍果, huáng lóng guǒ) — also known as yellow pitahaya or pitahaya amarilla, botanically Selenicereus megalanthus — has a yellow spiny exterior without wings and pure white flesh with black seeds. Smaller than the red variety, but significantly sweeter and more aromatic.

The flavour has considerably more character than red dragon fruit: richer, more floral, lightly exotic with notes reminiscent of passion fruit and honey. In the professional kitchen, this is the preferred choice when flavour is the priority.

Origin & tradition

Yellow dragon fruit is mainly grown in Colombia and Ecuador. Availability is more limited than the red variety — deliveries are more seasonal.

You can identify ripeness by a bright yellow skin (green = unripe) and flesh that gives slightly under gentle pressure. The spines on the skin are soft on ripe fruit.

Flavour & texture

Use yellow dragon fruit exclusively raw — heat destroys the aroma completely. Serve at room temperature or lightly chilled for the best flavour experience.

Pairs exceptionally well with coconut cream, passion fruit, lime and ginger. Can also serve as a flavourful base in a fruit coulis or vinaigrette for a fruity amuse-bouche.

Storage & freshness

Store yellow dragon fruit at room temperature until ripe, then refrigerated (8–10°C) for up to 5 days.

Do not store below 8°C — cold damage leads to spots in the flesh.

Once cut, consume immediately or cover and refrigerate, using on the same day.
