Fresh jujube is something entirely different from the dried Chinese date. Crisp like an apple, mildly sweet, and a distinctive seasonal snack in autumn menus or Asian tea presentations.

What is jujube (vers)?

Fresh jujube (Ziziphus jujuba) is a small, red to mahogany-brown fruit the size of a cherry or small plum. The flesh is white, crisp and mildly sweet — similar to a mild apple but drier. A fleshy layer surrounds the small stone.

Fresh jujube differs drastically from dried jujube (Chinese date): raw it is crisp and fresh, dried it becomes soft, sticky and much sweeter. They are the same fruit, but the eating experience is barely comparable.

Origin & tradition

Fresh jujube is grown in northern China, mainly in Shandong, Hebei and Shanxi. The season is short: September to November. Outside this season, fresh jujube is not available.

Ripeness: red to mahogany-brown skin colour. Greenish-yellow jujubes are unripe and very sour. Red ones are ready to eat and mildly sweet. Dark brown and wrinkled means overripe.

Fresh jujube does not ripen significantly after harvest — receive ready-to-eat and process promptly.

Flavour & texture

Fresh jujube has a mild, lightly sweet flavour with a fine acidity and the texture of a dry, crisp apple. It tastes less pronounced than most exotic fruits — its strength lies in its autumnal, understated freshness.

Pairs well with nuts (walnut, cashew), honey, ginger tea and autumn vegetables. In Chinese cuisine, jujube is also used in rice porridge or tea as a sweet addition. Raw, it is a perfect accompaniment to green or jasmine tea.

Storage & freshness

Fresh jujube has a reasonably long shelf life: room temperature 1 week, refrigerated (4–6°C) up to 3–4 weeks. This is remarkably long for fresh fruit.

Store dry and unwashed. Wash immediately before consumption.

Overripe (dark brown, wrinkled) jujubes can still be used for tea or sweet soups but are no longer suitable for raw presentation.
