Sesame oil is a finishing oil, not a cooking oil — a few drops added at the end of preparation add a nutty depth that no other ingredient can match.

What is sesamolie?

Toasted sesame oil (芝麻油 zhīma yóu) — also known as sesame oil, goma abura (ごま油 Japan) or chamgirum (참기름 Korea) — is a dark, aromatic oil pressed from toasted sesame seeds.

Smoke point only 170°C, making it unsuitable as a cooking oil. Used exclusively as a flavouring in dressings, marinades and as a finishing touch. Light sesame oil (untoasted) is milder and can be used for frying.

Origin & tradition

Sesame (Sesamum indicum) is one of the oldest oil crops, with origins in Africa and India. In use in China for more than 2,000 years. Korean sesame oil is generally the most intensely toasted.

Flavour & texture

Deeply nutty, rich and complex with a light smokiness. Intense — use sparingly. A few drops transform an entire dish.

In China classically used in wonton sauce and cold noodles. In Japan indispensable in ramen toppings, gyoza dipping sauce and gomae. In Korea the base of bibimbap sauce and namul.

Cool and dark for 6–12 months after opening. Seal airtight — goes rancid quickly on contact with air.
